Ingredients

Instructions

  1. In a large pot, heat coconut oil over medium heat. Add the cubed chicken and cook until browned on all sides. Remove the chicken from the pot and set it aside.
  2. In the same pot, add chopped onion, sliced carrots, sliced celery, minced garlic, grated ginger, and grated turmeric. Sauté until the vegetables are softened, about 5-7 minutes.
  3. Return the browned chicken to the pot and stir to combine with the sautéed vegetables.
  4. Pour in the chicken broth, ensuring it covers the ingredients. Bring the soup to a gentle boil.
  5. Stir in the cauliflower rice and reduce the heat to simmer. Cook for 10-15 minutes or until the cauliflower rice is tender.
  6. Add chopped bok choy to the pot and cook for an additional 3-5 minutes until wilted.
  7. Season the soup with salt to taste. Adjust the seasoning as needed.
  8. Ladle the Ginger Turmeric Chicken Soup into bowls. Garnish with freshly chopped cilantro.
