  3. In a small bowl, combine the melted coconut oil, minced garlic, dried thyme, dried rosemary, dried oregano, and salt. Mix well to create a flavorful herb and garlic-infused oil.
  4. Pour the herb and garlic-infused oil over the chopped vegetables. Toss the vegetables until evenly coated with the oil and herb mixture.
  5. Spread the coated vegetables in a single layer on a baking sheet lined with parchment paper. Ensure they are not overcrowded for even roasting.
  6. Roast the vegetables in the preheated oven for 25-30 minutes or until they are tender and slightly caramelized. Stir the vegetables halfway through the cooking time for even roasting.
  7. Once the vegetables are roasted to perfection, remove them from the oven. Garnish with freshly chopped parsley for a burst of freshness.
