  1. In a food processor, combine fresh basil, fresh cilantro,  olive oil, pine nuts (if using), minced garlic, and  salt substitute. Process until smooth.
  2. In a small bowl, whisk together  balsamic vinegar,  olive oil,  salt substitute, and  ground pepper substitute. Set aside.
  3. Season the shrimp with  salt substitute and  ground pepper substitute. In a skillet over medium heat, cook the shrimp until pink and opaque, about 2-3 minutes per side. Remove from heat.
  4. In serving bowls, assemble arugula, cooked quinoa, diced avocado, and cooked shrimp.
  5. Drizzle AIP pesto over the bowls and add a generous drizzle of AIP balsamic vinaigrette.
  6. Toss the ingredients together in each bowl to combine flavors.
