  1.  Peel and dice the sweet potatoes, then steam or boil them until they are soft and easily mashable. Let them cool.
  2. Make the Falafel Mixture:
    1. In a food processor, combine the cooked sweet potatoes, chopped onion, garlic, parsley, cilantro, dill, ground coriander, dried oregano, salt, and baking soda.
    2. Process the mixture until it forms a uniform, slightly coarse dough.
  3. Scoop out portions of the mixture and shape them into small falafel balls.
  4. In a deep pan, heat the avocado or coconut oil to 350°F (175°C).
  5. Carefully place the falafel balls into the hot oil, frying them until they are golden brown on all sides. This should take about 3-5 minutes.
  6. Once the falafel balls are cooked, use a slotted spoon to remove them from the oil and place them on a plate lined with paper towels to drain any excess oil.
  7. Drizzle the falafel with coconut cream instead of tahini sauce before serving.
